This is a quick and easy cake recipe. A can of pumpkin and some cinnamon make it a delightful fall/winter dessert. Per Judi Criswell, who submitted it, you should make it a day ahead; “it seems to get even more delicious.” Given how stressful I often find preparing Sunday dinner for eight, I did just that. Since I didn’t try it the day I made it, I can’t tell you if time improved the cake, but it sure was fabulous!
It’s a very moist cake. The cream cheese frosting was delicious. If I made it again, I’d double the frosting. My sister, who would eat frosting exclusively if she could, did ask if there were more frosting to smear on it.
