This post is part of series where I–or someone–will cook each recipe in Cooking with Your Friends, the cookbook compiled by the Friends of the Haverford Township Free Library, and review it.

This is a quick and easy cake recipe. A can of pumpkin and some cinnamon make it a delightful fall/winter dessert. Per Judi Criswell, who submitted it, you should make it a day ahead; “it seems to get even more delicious.” Given how stressful I often find preparing Sunday dinner for eight, I did just that. Since I didn’t try it the day I made it, I can’t tell you if time improved the cake, but it sure was fabulous!

It’s a very moist cake. The cream cheese frosting was delicious. If I made it again, I’d double the frosting. My sister, who would eat frosting exclusively if she could, did ask if there were more frosting to smear on it.

YUM!! I love these posts. And your sister’s right, the frosting to cake ratio should be high 🙂
